How one Bergen County town became a cradle for New Jersey wrestling coacheshttps://www.northjersey.com/story/sports/high-school/wrestling/2023/02/23/paramus-nj-cradle-for-hs-wrestling-coaches/69926802007/Sean Farrell / NorthJersey.comJoe Down's first move as Vernon wrestling coach was not a popular one. At least, not at first.Down turned back the clock when it came time to choose an entrance song, opting for Jethro Tull's "Locomotive Breath". It didn't catch on until Down explained the significance behind the 1971 hit – it's welcomed Paramus wrestlers onto the mat for over four decades, including Down himself.
"I told them the story behind it and now they love it," Down said. "They play it in the mat room. I didn't want to give it up because it reminds me of my high school career."
The song choice is one of countless examples of how the Paramus wrestling program has affected teams all across the region. A town that's better known for retail and Route 17 traffic has developed another top export of late: high school coaches.Four head coaches at this year's Region 1 tournament are former Spartans: Down (Class of 2010), Lakeland's Joe Cervino (1996), Old Tappan's Rob Ortiz (1996) and Pascack Hills' Dave Bucco (2001).Another Paramus alum will be by the mat at the Region 2 tournament: Bogota/Ridgefield Park co-coach Jimmy Suess (2011).
The branches on this long and winding coaching fraternity are still proud of their roots.
"I'm not going to lie," said Cervino, now in his 15th year at Lakeland. "I may have worn one of my Paramus shirts to practice the week leading up to our Paramus match to give us a little extra motivation."
"I have one with a picture of us celebrating after winning the state sectional championship," Ortiz said. "I wore it to practice the next day after we won (this year) just to show the kids that back in the old days it happened to me too."
'Dedication produces champions'
So why have so many people from the same program wound up in the same profession? Well, it starts with a town that loves wrestling so much that street signs are named after its biggest stars.
Your subscription, your wayManaging your subscription has never been easier. Pause delivery, update your credit card and more online.Manage SubscriptionSuccess is the expectation at a program with nine sectional titles and two Bergen County titles. No other public school in North Jersey can say it's had a state medalist now for 12 straight seasons.
"In our era, the Paramus rec had 100-plus kids," Bucco said. "Everybody's parents were super involved in the process back then. We got to high school and, in terms of male sports, it was like wrestling was the premier sport."
The other ingredient is simple genetics.Cervino and Ortiz went back-to-back in the lineup as seniors while wrestling for their fathers: Joe Cervino Sr. (311 wins in 22 years) and his methodical sidekick Jose Ortiz."Wrestling is wrestling, but Coach Cervino taught us really to hold ourselves to high standards," Rob Ortiz said. "He was somebody who expected a lot from us and in turn, made us expect a lot of from ourselves and each other. I think that's the kind of message that we try to impart in our wrestlers here."
Like father, like son
One of Bergen County's winningest golf coaches came all the way from Cuba.
Jose Ortiz traveled from the island nation to Teaneck, moving with his brother to stay with their aunt and uncle. His parents escaped two years later on a fishing boat and settled in nearby Bogota. Jose Ortiz became the co-captain on the Bucs' first wrestling team and still coaches at River Dell in the spring.
Now, he spend his winters in the crowd at Old Tappan and Westwood, where younger son Joe is an assistant."He was a great complement to me," Cervino Sr. said from a condo in sunny Florida. "I was a little bit like my son: pretty boisterous and vocal. Jose was more of a calming figure for the coaching staff.""I remember it clear as day," Bucco said. "Mr. Ortiz had a huge binder of every single newspaper clipping box score that one could possibly gather. We always felt like we were so many steps ahead of most programs when it came to bumping and coin flips and match strategy."
The Spartan way
All four head coaches interviewed for this story have brought a piece of Paramus with them.
Bucco still hangs a leaderboard in his room at Pascack Hills that tracks the number of team points scored and allowed by each wrestler. He waxes poetic about a Granby roll from 25 years ago and notes that Broncos assistant Kevin Moran was one of his high school teammates.
Down said his practices are "basically identical" to the ones former coach Steve Klass ran at Paramus about 10 years ago. The Vernon coach often scans the box score for Pascack Hills and Old Tappan and finds himself rooting for teams with Spartan ties.
"There's a vivid memory when we wrestled Bergen Catholic my senior year," Down said. "We beat them in 2010 and that gym was just packed. It was absolute chaos. That's what I want Vernon to be. I want the town to love wrestling."
The younger Cervino laughs at how often his team will walk out to an empty parking lot at 7 p.m. after most other winter teams are long gone. The longtime Paramus motto "Dedication produces champions" is still ingrained in the back of his head.
"A line that I use a lot here at Lakeland is we're not going to be out-worked," Cervino said. "We might a lose a match because a kid is better than you. But you're never going to lose a match because you're out-worked.
"I can't tell you how many times I've talked to Rob Ortiz when I'm driving home and we're talking wrestling. He's still at his school because one or two of his kids are on a treadmill or a bike trying to run off a couple extra pounds to make weight for the next day. It's nice. You always have somebody to to talk to who knows what we went through when we were at Paramus."
As time goes by, the Joe Cervino Sr. wrestling tree keeps adding new branches.
Two of his grandsons wrestle in the Paramus rec program and his granddaughter is the scorekeeper for the Spartans' varsity team. Matches between Paramus and Lakeland can turn into a family reunion.
"It brought back a ton of memories," the Lancers coach said. "It was a little weird being on the flip side of it. We're out there and Locomotive Breath came on.
"That was the song we came out to every single match when I was in high school and when I was a little kid at 10 years old, watching us in the stands. I hear it and I got flashbacks to being in the tunnel and getting ready to take the mat. In reality, I'm on the opposite side of the mat and I'm getting ready to face them."

Outlook: A Zeppetelli-Klein final could be a barn burner that might even be replayed in Atlantic City. Zeppetelli is seeded first based on her 4-1 decision over Klein at the BCWCA. But there is no guarantee that Zeppetelli will get to the final as she will need to get past Sparta’s Paige Weiss in the semis. Weiss is a talented freshman who has lost only to Klein and up a weight at 107 to Leeana Mercado of Lodi. She has also previously beaten the 3-seed, Lentine.

Paramus, 285 poundsThe Spartans junior claimed his spot in the semifinal by getting past St. Peter's Prep heavyweight Connor Reynolds, 6-1.
Making it even more impressive is the fact that the third-seeded Elyash is on the small side of his weight class at a trim 216 pounds.
Elyash tries to make up for it with his agility, as well as his background as a right guard and defensive tackle in football.
"It helps the IQ and helps with being explosive," Elyash said.
"I love the grind. It makes me a better wrestler. It makes me a better person."
Elyash, who is trying to break out after being limited by a torn hamstring last season, will take on Delsea's Rocco Bennett with a spot in the championship on the line.
